Chocolate Cashew Cookies
There's always chocolate cashew cookies in my home during the festive. It's been a tradition created by my aunt more than a decade ago. She used to bake this cookie for sale during the festive. Now she bakes it for friends and families to enjoy. This year, I prompted her to try making it in chocolate flavour. It was a success and a great hit! It beat the plain one out. I'm not going to wait till the next festive to enjoy her cookies. Why wait when it's good for indulgencing anytime of the year? Here's the recipe for you to enjoy! Ingredients: 4 egg yolk 250 gm butter 200 gm sugar 300 gm self raising flour 100 gm corn flour 40 gm cocoa powder 150 gm halfed cashew nut (for topping)
Method: - Cream sugar and butter until light and fluffy. Add in egg yolk and mix well.
- Mix dry ingredients together. Mix into creamed batter. Do not knead.
- Roll out batter into half centimeter and cut out with cookie cutter.
- Top with half cashew nut. Press it slightly into the cookie to avoid falling out after baking.
- Lightly glaze with egg yolk and bake at 190C for 20 minutes. This makes a great contrast of yellow on brown when it's baked.
