My Mom's Favourite Chocolate Brownie Recipe.
This is my mom's all time favourite chocolate brownie recipe. I've made quite a few for her but each time she says this is the best. What's great is that it's also really quick and easy to whip up. No slogging in the kitchen for ours. And no need to beat the air into the batter. All you have to do is mix it up well, pop it into the oven and when it's cooked, cut into squares. That's it! Really, no fuss & heavenly tasting. Sometimes, when I feel like it I'll pop in some raisins to give it some bite. And if my sis is around (she don't like it with raisins) I'll put in some chopped nuts. Or if your guests are all adults, put in some brandy! I used cocoa powder in this recipe to give it a softer texture. Cocoa powder has much less cocoa butter than chocolate and therefore softer when cold. Ingredients: 200g Self raising flour 100g Cocoa powder 250g Butter 200g Sugar 140g Brown Sugar 4 large Eggs 2 Tbsp milk Nuts, chocolate chips and raisins are optional Method: - Mix butter, sugar and cocoa powder till well mixed.
- Fold in flour. Do not beat.
- Bake at 120°C for 20 minutes or until cooked.
- Optional to serve with warm chocolate sauce.
Quick and Easy Tips: Don't have any self raising flour? Not to worry. Add 2 1/2 tsp of baking powder with 240g plain flour. Sift together a few times to mix it well.More useful tips here.
